Long time no see 🙂 Summer is already here, so is the heat… ; everyone is on summer mood. And, at last, I can say I’m taking a rest. I finished culinary school, got my degree and now I can relax and gather my strength for the new year to come 😉 Today I have for you a combination of avocado and yogurt that can work either as a breakfast, as a snack, or as a light dinner depending on what you will accompany it.
It’s a simple, but very healthy and easy idea to have a variety in your diet, and you can combine it with salty or sweet, depending on your mood and the time of day. This is another way to use this magical food, avocado. In the blog you will find many avocado ideas here.
Avocado with yogurt with its silky texture can be combined with many other toppings than those I suggest. Let your imagination be free and make combine seasonal ingredients, fruits or vegetables, homemade jam and whatever else suits you.
Avocado Yogurt
A simple but quick and healthy recipe which could be a breakfast, a snack or a light dinner, depending on the topping
Ingredients
- 170 gr Greek yogurt (2% fat)
- 150 gr mature, peeled and pitted avocado
- savory version
- 1 pinch salt
- 1 tsp lime juice
- suggested toppings
- salted and roasted pumpkin seeds
- tomatoes, coriander and onion
- radishes and fresh coriander
- sweet version
- 1-2 tbsp honey or maple syrup
- 1 tbsp lemon juice
- suggested toppings
- strawberries, or other seasonal fruits
- homemade jam
- homemade granola (see note*)
