It’s impressive, isn’t it? And so simple to make! These are frozen white chocolate bars with yogurt and Blue Ninja, a summer delicacy that not only refreshes and satisfies your sweet tooth, it also does you good.
So let’s talk about Blue Ninja. This is the powder that comes from the dry flowers of the Butterfly Pea plant (its scientific name is Clitoria Ternatea). It has been used for centuries by Ayurveda because it stimulates memory, fights stress and is very rich in antioxidants. It relaxes you in a natural way, since it does not contain caffeine. In addition, it helps in the production of collagen, which enhances the elasticity of the skin, preventing premature aging.
Its color is completely natural and comes from the petals of the herb, which are collected by hand and then ground into a very fine powder. Blue Ninja also hides a secret: when its Ph changes, that is, if for example, we add a bit of lemon or lime in it, it changes color and turns from blue to purple! A property that makes it one of mixologists favorite ingredients, but also of foodies.

The recipe I suggest is a simple summer snack, with minimal ingredients based on these frozen yogurt bars with strawberries and pistachios, one of the first recipes on the blog you really loved.

Blue Ninja, White Chocolate & Yogurt Frozen Bark
A delicious, refreshing, frozen snack, with butterfly pea flower powder
- 250 gr. white chocolate in pieces* divided into two parts
- 250 gr. whole Greek yogurt* divided into two parts
- 1 teaspoon Blue Ninja sifted
Wet a piece of non-stick paper with a bit of water, drain it well, crumple it and place it in a 24X24cm pan. (This way the paper softens and fits better in the pan.) Set aside.
Prepare two bain-marie, putting 2cm water in 2 small pots and on them. Place 1 bowl with 125gr. white chocolate in each pot. Make sure the heat is low and that the bottom of the bowl does not touch the water, because otherwise it will ruin the chocolate.
Once the chocolate has melted, remove the bowls from the pots and add 125gr. Greek yogurt in each bowl, stirring well.
In one of the bowls add one teaspoon of Blue Ninja and mix well.
Using different spoons for each mixture, put scattered spoonfulls of the white and blue mixture in the pan, alternately.
Then, with a wooden straw, mix the two mixtures swirling, creating the design you see in the photos.
Put the pan in the freezer for at least 3-4 hours, or overnight. Then cut the bars into as many pieces as you want and store them in the freezer.
Take out of the freezer as many pieces as you need and consume them immediately, because they melt quickly.
