    Chocolate Buckwheat Porridge (VEG, GF, LF)

    Let’s talk about fasting … In the last few years I have heard more and more people fasting, especially during the Great Lent. Most do so because of religion and belief, but there are some who see it as a good opportunity for detox. Either way, fasting is definitely something good for your health. Throughout the year, and during fasting as well, a good and nutritious breakfast is necessary! That’s why today I have for you a great idea for a super nutritious breakfast, which is suitable for fasting period: a chocolate porridge with buckwheat and Alpro unsweetened almond drink, which you can prepare in just 5 minutes!

    I often fast, unfortunately not all of the Great Lent because of work, but very often. Alpro drinks have saved me because they often cover the need for a good and tasty breakfast during the fasting period, giving you more choices. You don’t have to eat the same thing everyday 😉 I always choose the unsweetened almond drink, and I have a delicious white canvas to which I can add whatever I want 🙂

    This chocolate porridge with buckwheat is a gluten-free option, but you can also do it with oats. Also, instead of cocoa, you can use carob powder. It can stand in the refrigerator for 3-4 days, so making more servings at once, you are covered for many breakfasts. I have tried it with a pinch of cayenne pepper and it was great, so I recommend it to you.

    A gluten-free chocolate and buckwheat porridge, to make your breakfasts even tastier!

    Ingredients

    • 120 gr. buckwheat flakes
    • 2 cups (500ml) Alpro unsweetened almond drink
    • 80 gr. honey or maple syrup
    • 1 tbsp coconut oil
    • 2 tbsp cocoa powder or carob powder
    • ½ tsp cinnamon
    • ¼ tsp salt
    • a pinch of cayenne pepper (optional)
    • garnish:
    • fresh fruits
    • cocoa nibs
    • nuts
    • extra honey or maple syrup (if necessary)

    Instructions

    Put all the ingredients in a saucepan and heat to medium-high heat. When it’s ready to boil, lower the heat and stir until all the ingredients are mixed and almost all the milk is absorbed.

    Remove from heat and let it cool for 3-4 minutes. At this stage it will thicken more. If it thickens more than you want, add a bit more almond drink and stir.

    Serve in a bowl, garnish with fresh fruits of your choice, and whatever you crave for. I put cacao nibs, bananas, blueberries, and some extra honey.
