    Chocolate & Coconut Granola Bars

    I spent an entire weekend cooking. And now that it’s over, instead of feeling exhausted, I feel the sweetest feeling that only the foodies could understand 😉 It is nothing more than the fulfillness of preparing delicious meals, desserts, etc. that you enjoy with the family; things that you have made to please them.     Chocolate & Coconut Granola Bars

     

    Among all the wonderful I made during the weekend, are these chocolate and coconut granola bars. I do not know if it is because I haven’t made a new such recipe for a long time, or if it is because it is true, but these bars are fan-ta-stic! First, they have chocolate, secondly the coconut “sounds” as long as it is needed, third it is has easily found ingredients.

    There is a variety of granola bars recipes in this blog. This time I cut them in 16 oblong pieces. They can be easily cut into 32 pieces and made smaller.

    Delicious and healthy chocolate & coconut granola bars with pistachios

    Ingredients

    • bars:
    • 100g almonds
    • pistachios
    • oat flakes (in gluten-free version we use buckwheat flakes)
    • ground flaxseed
    • grated coconut
    • honey (or maple syrup for vegans)
    • tahini
    • coconut oil
    • ¾ teaspoon vanilla extract
    • ¼ full of cinnamon teaspoon
    • chocolate glaze:
    • ¾ tablespoon coconut oil
    • dark chocolate, cut into pieces
    • garnish:
    • 10g coarsely cut pistachios
    • coconut flakes, or grated coconut

    Instructions

    In a food processor put almonds, 40g. pistachios and 90g. oat flakes and process until it turns into powder , about 1 minute. Transfer them to a large bowl.

    Roughly chop remaining almonds and pistachios and add them to the bowl along with the rest of the oats, flaxseed and coconut.

    In a small saucepan, on very low heat, put the coconut oil, honey and tahini and wait for them to warm up a bit, so they can be mixed. Mix them well.

    In the meantime, preheat the oven to 170 ° C.

    Rinse a piece of parchment paper with a little bit of water, strain it well wrinkling it and line it in a 24x24cm baking dish. (This way the paper softens and fits better on the baking dish.)

    Pour the dry mixture with the liquid mixture and, using a wooden spoon, mix thoroughly so that the mixture becomes wet evenly. In the beginning you will think that the liquid mixture is not enough, but be patient and it will mix well.

    Transfer the mixture to the pan and spread it evenly. Bake the bars for about 18-20 minutes until they get color. Allow to cool completely.

    In a bain marie pan, warm the coconut oil and chocolate and stir until it becomes a smooth glaze. Pour it over the bars with and use a spatula to spread it evenly.

    Garnish with pistachios and coconut flakes and let it cool (now I want you to be cool …. 😀 ) overnight, especially if the weather is hot.

    After the glaze has cooled and thickened, cut the bars into pieces.
