Are you looking for a salad a bit different from the ordinary but simple? And you want low-calorie? You are reading the right article! This cucumber salad with fresh cilantro and lime juice is super low-calorie and, although the ingredients are quite few and simple, it makes a perfect side dish of grilled meat. You can also serve it with low fat Greek yogurt, for a refreshing and light dinner. This salad is rich in potassium and vitamin C.
The chopped red pepper gives a fairly spicy touch to the salad dressing. If you do not like spicy food use less. The red pepper-lime juice combination gives a far-eastern touch to the salad.

Cucumber Salad with Fresh Cilantro and Lime Juice
Ingredients
- 5 small, or, 2 large cucumbers
- 2 garlic cloves, thinly chopped
- 3 tbsp fresh lime juice
- 2 small red peppers, thinly chopped
- 4 tbsp olive oil
- 4 tbsp fresh cilantro, thinly chopped
- salt, pepper
Instructions
Cut the cucumbers into very thin slices. If you have a mandolin slicer, use it; otherwise use a very sharp knife. Put the cucumber slices in a salad bowl.
Add chopped cilantro (or parsley).
Prepare the dressing by mixing all remaining ingredients. Shake well. I use a glass jar. I put all the dressing ingredients in it and shake. Ready in a minute.
Pour the dressing over the cucumbers and cilantro and mix well.
It is better to let the cucumber salad with fresh cilantro and lime to marinate in the fridge, for about an hour. If you do so, have in mind that the flavors will intensify. So, be careful with those red peppers! And do not forget to let it thaw slightly before serving.
