Do you love ginger? I certainly do! And since I love granola bars as well, I had to create a recipe to match my two loves. And I did. I hope you enjoy this recipe as much as I do!
Granola Bars with Candied Ginger, Pineapple and Spices
Ingredients
- ¾ cups candied ginger, chopped
- ¼ cup candied pineapple, chopped
- 1 cup almonds, coarsely chopped
- ½ cup peanut butter
- ¼ cup grape syrup*
- 1 ½ cup rolled oats
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground clove
Instructions
Preheat oven in 170oC (340oF).
Place chopped ginger and pineapple in a bowl.
Add almonds, peanut butter, grape syrup and rolled oats and mix well.
Finally, add spices and mix very well.
Spread the mixture in a 24X24cm (9X9in) baking pan, lined with parchment paper and bake for 18-20’, until golden brown.
When completely cold, cut the bars in 12 even pieces.
Keep the bars in an airtight container and store in a cool place.

Notes
*You can replace grape syrup with honey. If you do so, make sure you will be using 1/3 cup honey and 1/3 cup peanut butter, because honey is thicker than grape syrup.
Candied ginger is sold in spice shops, and candied pineapple can be found in all large supermarkets, as well.
You can also use a loaf pan. The thickness of the bars depends on the size of the pan.
When the weather is warm you can keep the Granola Bars with Candied Ginger, Pineapple and Spices for about 2 weeks. Otherwise you can keep them longer.
