    Greek Yogurt Banoffee Parfait

    Greek yogurt is one of my favorite ingredients. There are so many recipes that you can create with it, that although I use it really often, I’ m usually surprised by its diversity. This Greek yogurt banoffee parfait is either a luscious breakfast or a light dessert.

    Greek Yogurt Banoffee Parfait – Παρφέ Γιαουρτιού Μπανόφι

    In essence it is a recipe inspired by the favorite dessert of many, banoffee, but in a healthy version. The biscuit base is replaced by a very easy and crunchy granola, and the caramel is a much healthier, made by dates rather than sugar.

    This recipe yields 4 servings. You can make a larger batch of granola and date caramel to use in other recipes or combinations.

    Ingredients
    1. 2 bananas cut into thin slices
    2. 2 cups Greek strained yogurt 2% fat
    3. 1-2 tablespoons grated chocolate (to garnish)
    Date caramel
    1. ½ cup (75 g.) pitted, chopped dates
    2. ½ cup (125 ml) of fresh milk, 1.5% fat
    3. a few drops of vanilla extract
    4. 1 pinch fleur de sel
    Crunchy granola
    1. 1/3 cup (50 g.) chopped almonds (or other nuts)
    2. 1 tablespoon quinoa (optional, it makes a crunchier granola)
    3. ¾ cup (60 g.) rolled oats
    4. 1 tablespoon olive oil
    5. 1 pinch fleur de sel (optional)
    6. 1 tablespoon honey
    Instructions
    1. Prepare date caramel: Add to food processor all ingredients and puree until smooth.
    2. Transfer the mixture into a saucepan, over medium-low heat, and stir for about 10 minutes, until it thickens, becomes golden brown and reduced by half in volume.
    3. Leave it aside to cool.
    4. Prepare the granola: In a nonstick skillet, over medium heat, roast almonds, oats and quinoa, for about 5 minutes, until golden brown and flavorful. Stir constantly with a wooden spoon.
    5. Add olive oil and salt and mix well.
    6. Finally add honey and turn off the fire. Mix thoroughly to coat all ingredients with honey.
    7. Leave it aside to cool.
    8. Prepare the yogurt parfait layering in every glass in this order: about 2 tablespoons of granola, a few banana slices, about 1 teaspoon of date caramel and 1 heaped tablespoon yogurt. Repeat.
    9. At the end sprinkle yogurt with a bit of granola, some grated chocolate and 1-2 banana slices and serve.
    Notes
    1. -You can prepare yogurt banoffee parfait the night before, in a mason jar, and keep it in the refrigerator. The next day you can carry it comfortably in your office. Have in mind that granola will not be as crunchy as it is if you consume immediately.
    2. -To keep bananas from turning brown, coat them with some fresh lemon juice.
