It sounds unbelievable, I know. It is indeed the easiest dessert you can make in an instant, a healthy persimmon and cocoa pudding, with only 2 ingredients and no cooking! With 2 persimmons and a bit of cocoa you have a light and healthy dessert in no time and without cooking. And most importantly, sugar free. You can enjoy it immediately as a cream, but if you put it in the fridge for a while it will be even better.
When I first saw this recipe online I was surprised. I would never have imagined that in this way you would have a natural treat, which tastes like a normal caloric dessert. I assure you that it is delicious and even those who do not like persimmons will like it.
You can use both types of persimmons on the market, the “apple” type (tight flesh, even when ripened) and the other type that softens a lot when it ripens. I prefer the latter and I made this recipe with them. In case you have your own fruit, or can find organic, then you don’t even need to remove the skin, just the cap.
Persimmon has a lot of natural pectin, so you don’t need any thickener for this recipe. What you can add is some ingredient that will give a “kick”, like a bit of cinnamon and/or orange zest.
The dose I give you makes 4 small puddings. Of course you can double the recipe.
As for the garnish of the healthy persimmon and cocoa pudding , I used orange zest, but coconut chips or pistachios would go well with them.
