It’s been a few months that I have the privilege of doing my traineeship for the culinary school degree at a great restaurant located in Plaka, Athens; it is called 7 Food Sins Gastro Pub. I feel the urge to write a few words about it for two reasons. First, because it’s been part of my life for some time now (and it’s going to be for a few more months), so I want to share it with you. Secondly, because good things should be said out loud, and that’s something that I always do in my life.
My traineeship started in July, just after the final exams. The very talented chef Vasilis Fotos and his team welcomed me very warmly and cordially and with a lot of willingness to show me everything I needed (and with a lot of patience sometimes … :D) From the first day I realized how much they love what they do, how loyal they are to their job and how much serious and consistent they are in their workplace.
Through this love for creating really good food came out the new menu of 7 Food Sins. The philosophy: emphasis on seasonality and Greek products, that’s why the menu will change for every three months approximately, so seasonal ingredients could be used. I tasted the dishes, I photographed them and I present them to you today, as there are many changes in the dishes, as well as in other offered items.
The dishes are less complex, with fewer ingredients but with more flavor. Moreover, the number of dishes in the menu has been reduced, so that it is possible to add freshly baked breads and breadsticks that are kneaded daily in the kitchen, as well as homemade cold cuts (which due to the required ripening time will be entered in the menu gradually). Also, 7 Food Sins has its own smoke house, where the risotto shrimps are smoked daily (this one you should definitely try!), as well as cold cuts and meats.
Another new addition on the menu is the degustation menu, a 5-course tasting menu on individual dishes – samples.
On the card will remain some of the dishes of the chef Tassos Stefatos, which they were loved the past year, such as Black Fish “N” Chips, Crunchy Moussaka (a different moussaka), Scallops, Vegetarian Greek Salad Burger, Burger Trilogy and the Inside Out Souvlaki (which will now be in the 7 Food Sins brunch). The desserts remained are the Orange Pie and the Liquid Chocolate Cake.
Brunch is served every Saturday and Sunday between 12:00 – 18:00. You will be able to choose between freshly brewed Peinirli (this is a must try, as well!), Eggs Benedict, French Toast of a delicious buttery brioche, vegetarian omelet and, as I said before, Burger Trilogy and Inside Out Souvlaki.
What will undoubtedly impress you is the Chocolate Forest! This is a dessert served for 2 people. A few words are not enough to describe it 🙂 The earth is made of cocoa paper. The relief of the forest consists of chocolate in various textures: warm (mini soufflés), cold (70% chocolate cream), and feuilletine with hazelnut praline. The trees of the forest are made of kataifi (a very fine vermicelli-like pastry used to make desserts in various Mediterranean and Middle Eastern cuisines) , while crispy mushrooms made from meringue spring up. The Madagascar vanilla stones complete the setting, while the coolness is given by the hazelnut ice cream that blends perfectly with the fluid spiced caramel.
