Happy and blessed new year to all!! I am sharing the first recipe of the New Year; a colorful light salad, with seasonal ingredients. Red cabbage salad with rice noodles, which also contains onion, orange, mint and pumpkin seeds. With a simple lime dressing it is a light, nutritious and satisfying meal.
A few words about red cabbage salad
I like to try new combinations of ingredients in my daily diet. And, although this one may sound a little unusual, it is indeed excellent. It is a salad full of nutrition and taste, which can be easily added to your bento box, since it can be prepared from the day before. Rice noodles don’t even need boiling. You need to dip them in hot water for 2 minutes and they are ready. The mixture of cabbage and other ingredients can be kept well in the refrigerator for 2-3 days. The orange gives the necessary freshness and the pumpkin seed… what else? Crunchiness 😉
Cabbage
Cabbage is one of my favorite winter vegetables. Especially the red one! It is not only a bomb of nutrients, but also a versatile vegetable, which you can cook in a thousand and two ways! The simple Greek cabbage-carrot salad is one of my favorites. But I like even more, though, the lentil, red cabbage and stilton cheese salad. Red cabbage Salad with Rice Noodles
Red cabbage salad with rice noodles, which also contains onion, orange, mint and pumpkin seeds. With a simple lime dressing it is a light, nutritious and satisfying meal.
Ingredients
- 200g rice noodles (I chose wide)
- 200g approx. red cabbage, finely chopped
- 1 orange, peeled (and optionally filleted)
- 1 medium onion, very thinly sliced
- 2 cloves garlic, minced or grated
- the zest of a lime
- 10-12 fresh mint leaves, chopped
- 8 sprigs of fresh coriander, chopped
- 4 tbsp pumpkin seeds
- dressing:
- 3 tbsp olive oil
- 1 tbsp vinegar (I used raspberry)
- 1 ½ tsp honey, or maple syrup
- the juice of one lime
- 1/8 teaspoon chili flakes
- salt, pepper
Instructions
Prepare the dressing by mixing all the ingredients in a jar.
Hydrate the rice noodles according to the instructions on the package.
Put the cabbage, onion, garlic, zest in a bowl, pour over half the dressing and mix well. Let them marinate for a few minutes.
Serve the salad on a plate, together with the pasta, pour a little more dressing and garnish with the orange, pumpkin seeds and herbs.
