    These roasted artichokes with garlic and lemon have stolen my heart lately 😀 With this recipe I have really enjoyed artichokes this year. It’s the first year I have cooked them so many times, and I am sad that their season ends so quickly. They make a great side dish, but also a light meal now during fasting, with minimal ingredients.

    You’re going to tell me now that you’re bored of artichokes and don’t cook them, even though you like them, right? The way I show you today is much faster and the result is very tasty. Buttery, almost caramelized, richly flavored roasted artichokes that melt in your mouth and matches perfectly with garlic and lemon.

    Ingredients needed for roasted artichokes

    All you need are good artichokes. All the rest, i.e. garlic, lemon olive oil, mustard and parsley, you definitely have already.

    The preparation

    The process is quite simple. First, cut the stalk of the artichoke, leaving about 2 centimeters. Then cut the top of the leaves with a knife, about 2 cm. Remove the outer leaves, 3-4 rows, and cut the artichoke in half. Using a spoon remove the “hair”. That’s it. Dip it in a bowl with water and lemon so that it does not turn black while preparing the rest. While the artichokes are cooking, prepare the dressing, and you are done.

    How we eat them

    And we come to the most interesting part: how we eat them 😉 At first we pull the outer leaves by hand, dip them in the sauce and with our teeth we scrape the soft part of the leaf, i.e. the bottom part, and throw away the rest. Like eating pumpkin seeds or something 😀

    We continue like this and we will see that as we go further the leaves become softer and have more flesh, until we reach the even softer leaves that are eaten whole. And finally, we reach the heart, which compensates us with its full, buttery taste!

    Ingredients

    • 4 artichokes
    • 60ml olive oil
    • the juice of 1 large lemon, for the basin with the water
    • the juice of 1 lemon, for the cooking
    • salt, pepper
    • dressing:
    • 2-3 tbsp olive oil
    • the zest of 1 lemon
    • the juice of ½ lemon
    • 3 cloves garlic, minced
    • 1 teaspoon Dijon mustard, or other mustard of choice
    • salt, pepper
    • chopped parsley, for serving

    Instructions

    Prepare the artichokes as follows: cut the stem of the artichoke leaving about 2 cm. Then cut the top of the leaves with a knife, about 2 cm. Remove the outer leaves, 3-4 rows, and cut the artichoke in half. Using a spoon remove the "hair".

    Dip each prepared artichoke in a basin with plenty of water and put the lemon in it, so that they don't turn black.

    After all and the artichokes have been in the lemon-water for about 4-5 minutes, take them out and drain them well.

    Grease a pan and spread the artichokes on it, initially with the cut side up. Sprinkle them with lemon juice and olive oil and season with salt and pepper. Turn them over so that the cut side is down.

    Roast them in a preheated oven, at 220°C, for 30-35 minutes.

    Meanwhile, prepare the dressing by mixing all the ingredients together.

    When the artichokes are cooked, put them on a plate, sprinkle them with the dressing and parsley.
