    Savory Waffles with Mixed Mushrooms - Αλμυρές Βάφλες με Διάφορα Μανιτάρια

    The reason for creating these savory waffles with mixed mushrooms, were the very beautiful mushrooms I found in the organic market a few days ago. So I remembered a recipe I had found in a magazine a couple of years ago and I really liked it, so I said I’d give it a try.

    If I remember correctly and I am not mistaken, these are the following mushrooms: lamb, chestnut, golden oyster and shitake. I also added some plain white mushrooms and cooked them with garlic and herbs in the pan. If it is not easy for you to find similar mushrooms, use dried ones found in supermarkets (in a much smaller quantity of course). Before cooking them, soak them in tepid water.

    The waffles are made from grated potato. They are very tasty and crispy on the outside, just what you need for a potato! 😉 Be careful not to miss the detail that the potatoes must be grated on a fine grater, so that they can be cooked well in the waffle maker.

    If, again, you don’t have a waffle maker, make pancakes with the mixture and cook them in a pan with a bit of olive oil. They will certainly be good in the air fryer as well, and will cook even faster, perhaps.

    I think it’s a beautiful and special meal to escape from the usual.

    Savory Potato Waffles with Mixed Mushrooms

    Savory potato waffles, served with sauteed mixed mushrooms, cooked with herbs. Simple ingredients, great taste!

    Ingredients

    • • 1 kilo of various fresh mushrooms, cut according to their size
    • • 800gr. potatoes, grated on a fine grater
    • • 1 cup chopped parsley, divided
    • 1 tbsp chopped chives
    • • 3 cloves of garlic, finely chopped
    • • 2 tbsp all-purpose flour
    • • ½ tsp dried tarragon
    • • salt, pepper
    • • olive oil

    Instructions

    Mix the grated potato with the flour, half the parsley, salt and pepper. Oil the waffle maker very well and bake 8 waffles, until the potato is cooked and turned golden. Time will vary by waffle maker.

    Meanwhile, heat 2-3 tablespoons of olive oil in a pan and add the mushrooms. Add garlic and tarragon and cook for 7-8 minutes on high heat. At the end, add the remaining parsley, chives, salt and pepper. Mix and set aside.

    Serve 2 waffles on each plate and accompany with mushrooms.
