    Vegan Berry Nice Cream

    Well, here I am! Whatever you think you are right! I disappeared for a long time, but it was for good reason 😉  I needed so much some time to rest and relax this summer that even dealing with social networks and anything electronic was tantalizing me. I turned them all off, so I enjoyed some me-time. And it was very nice. I highly recommend it! The first recipe I chose for you is the easiest and healthiest proposal for ice cream. A healthy vegan berry nice cream, which you can consume right away!

    The magic of making healthy ice cream at home is that no ice cream machine is needed, and it can also be done with almost all fruits, so you have a lot of flavor options. I chose my favorite berries, but it can also be made with peach, melon, strawberry, cherries and many more. It’s perfect for kids too!

    The basic material is banana, which we have put in the freezer before. You will definitely remember this tip. Peel the bananas when ripe and put them in the freezer for later use for smoothies, juices and ice-creams. 😉 Then there is the fruit we want to flavor our ice cream with, eg. berries. Preferably, they should also frozen. We also have coconut cream, which gives a nicer texture and helps blending the ingredients in the food proxessor. Coconut cream could be omitted, but in this case you should wait for the fruit to soften more and then blend. Finally, I added lime zest and juice for a twist. As a sweetener I used honey.

    You need a strong blender or food processor  for this recipe.

    Healthy, easy and delicious ice cream recipe. No ice cream maker needed.

    Ingredients

    • 3 ripe bananas (cut into pieces and frozen)
    • 340 gr frozen berries (about 3 cups) (or other fruit if your choice)
    • 375ml (or 1 1/2 cup) coconut cream
    • 2 tsp honey, or maple syrup
    • zest of 1 lime
    • juice of 1/2 lime

    Instructions

    Let the fruits to thaw for about 10-15 minutes.

    Put all the ingredients in the bowl of a strong blender or a food processor and blend until smooth.

    Taste and adjust the sweetener if needed.

    Serve immediately (it will be frozen but soft) or place in a preferably metal container with a lid, and leave it in the freezer for 1-2 hours.

    Berries are delicious and very popular. Rich in antioxidants, containing up to 10 times more antioxidants than other fruits and vegetables.
    Bananas are rich in potassium. At the same time, it is a good source of flavonoids making them an excellent choice for heart protection.
