Some of the things I like most to make is energy bars and all kinds of breakfast recipes.These recipes give you so many choices, so many different ingredients you can use and play with colors and flavors. This vegan berry oatmeal is so delicious and full, so tasty and nutritious, that I have already done plenty of times.
Although it looks like a smoothie, it’s more like a frozen porridge and it’s eaten with a spoon. You may prepare it tonight and enjoy the next morning, something like overnight oats. Well, It’s getting better and better, isn’t it? Oats can be replaced with buckwheat flakes for a gluten-free version. It goes without saying that you can use the milk of your choice, instead of coconut milk.
As for the toppings, it’s is your choice. Feel free and improvise! 😉
Vegan Berry Oatmeal
Vegan Berry Oatmeal, an delicious idea for breakfast, or, afternoon snack
Ingredients
- 190 gr. oat flakes (or buckwheat flakes for the gluten-free version)
- 375 ml coconut milk, cold (or any other milk of your choice)
- 1 1/2 ripe banana
- 230 gr. frozen berries
- 1 pinch salt
- maple syrup, or, honey, (to taste)
- Toppings:
- cacao nibs
- roasted almonds
- berries (fresh or frozen)
- Soak oatflakes in coconut milk for 10 minutes.
- Transfer the mixture to a blender and add the banana, berries and salt and blitz.
- Add the sweetener and pulse until it is incorporated.
- Transfer the mixture to bowls and garnish with toppings of your choice.
- You may also use as toppings:
- grated coconut
- pumpkin seeds
- sunflower seeds
- flaxseeds, etc.
