    Vegan Berry Smoothie Bowl

    The week begins with a delicious breakfast! With these kind of breakfast that make you day with their colors and appearance, apart from their taste. Smoothie Bowl with strawberries and blueberries, it is.

    I know you love my breakfast suggestions. I noticed it, mostly, last September when I dedicated a whole week on breakfast recipes. At that time, I had published Vegan Banana Pancakes and Smoothie Bowl with Roasted Figs, two recipes that you really trully loved, and through social networks I’ve been publishing older relevant recipes. It was great and I’m glad that other blogs followed, as well. I wish these kind of small tributes persuade more people to eat a good breakfast daily and not having a plain coffee to go.     Smoothie-Bowl

    These smoothie bowls, for those of you who aren’t familiar with the term, are nothing but a smoothie in bowl, but they stand out for their elaborate decoration (seeds, superfoods, fresh and / or dried fruits, granola, etc.). Their philosophy is this: a hearty smoothie to keep you full for hours, with all the nutrients of a balanced breakfast, and an elegant dish that will make you day. Just like simple smoothies, they are also easily adapted to the needs and tastes of each one and depending on the ingredients available.

    As I have said to you in an earlier post, it is very practical to keep your favorite summer fruit freezed, to make refreshing smoothies throughout the summer, in a flash. You will enjoy them longer than their season last (e.g. strawberries) and you will not need ice cubes that will dilute your smoothie. Do not forget to freeze bananas! Magic ingredient for smoothies!

    Ingredients
    1. • 1 ½ frozen banana
    2. • 2 cups strawberries
    3. • ¼ cup blueberry
    4. • 1/3 cup coconut cream, well stirred
    5. • 2 tablespoons of unheated grape syrup, or, honey, or maple syrup
    to garnish
    1. • strawberries, cut into thin slices
    2. • blueberries
    3. • coconut flakes, or grated coconut
    4. • chia seeds
    Instructions
    1. Blend all the ingredients together until smooth and creamy. Taste and adjust the sweetener if needed.
    2. Garnish with toppings of your choice and enjoy!
