Homemade ice cream because… we are burning in Greece these days! The heat wave is phenomenal! Actually it’s a vegan peach ice cream, flavored with lemon thyme; easy and quick, but mostly without any guilty ingredients. In texture it resembles a sorbet, but contains almond mylk, so you cannot name it as one.
In recent years, all these homemade, healthy ice creams, without dairy, eggs, etc., have gained the interest of many. Maybe, because nice creams, in addition to being healthy and delicious, they are very easy to prepare. With only two or three ingredients you have a delicious ice cream, to enjoy with your loved ones. Usually, you can serve them right away (they have a softer texture), or, you can freeze them if you want a firmer ice cream.
For so many years, I made all the ice cream without an ice cream machine, which is not very difficult. You just need to spend a little more time. This year I used an ice cream machine for the first time. Surely it’s a convenience, the texture of the ice cream is much better and, of course, it doesn’t need much of your time. However, have in mind that you can make this vegan peach ice cream without an ice cream machine.
Vegan Peach Ice Cream with Lemon Thyme
I used honey as a sweetener, but if you are vegan you can replace it with maple syrup. You know it already, I guess 😉
The process is very simple: simmer the fruit for a while with the honey and the lemon thyme, puree them together with the almond drink, freeze the mixture a while and finally, put it in the ice cream machine. If you do not have an ice cream machine, you should stir the mixture for the first hours every 30 minutes or so, with a fork, so that it does not make any crystalls.

Peach Ice Cream with Lemon Thyme
Vegan peach ice cream scented with lemon thyme, sugar & dairy free. It can be easily prepared without an ice cream maker, as well.
- 400gr. peeled peaches (about 2 large), cut in pieces
- 400ml almond mylk without sugar
- 80gr. maple syrup, or, honey if you are not vegan
- 5-6 sprigs of fresh lemon thyme
In a medium saucepan put the peaches, honey and lemon thyme to simmer for about 10 minutes on low heat.
Remove lemon thyme, let the mixture cool slightly and transfer it to a bowl. Mash it with a hand blender, adding the almond mylk. Allow the mixture to cool completely and put it in the fridge for 3 hours. *
Transfer the mixture to the bucket of the ice cream machine and work it for about 40 minutes. You can serve immediately as a soft-serve ice cream, or you can transfer it to a container with a lid and put it in the freezer, for a firmer version.
Remove the peach ice cream from the freezer 10 minutes before serving.
* If you do not have an ice cream machine, put the mixture in a container with a lid and place it in the freezer for 4 hours, stirring it every 30 minutes with a fork, so that it does not crystallize.
