Although I am a winter person, I admit that summer has its good parts, as well. Fortunately, there are all these summer fruits and vegetables that compensate me for all this unbearable heat. Watermelon is my favorite fruit since my childhood. The watermelon-feta cheese combination, not at all … I have never been able to figure out who thought this thing at the first place and how everyone in Greece loved it… All this until last year, when in a “brave” moment, I said to try it. And, of course, I loved it! So, this is my new recipe: watermelon and feta salad. 🙂
You will love it too, I’m sure. It is ideal for a light summer meal and very nutritious! Do not overdo it with feta cheese though, okay? : D The combination with rocket, onion and pumpkin seeds is very successful and the chili-lime dressing suits perfectly.
Watermelon & Feta Salad
A loving, classic Greek salad with a twist of baby rocket, pumpkin seeds and chili-lime dressing.
Ingredients
- ½ small watermelon (preferably seedles, cut into cubes)
- 40 gr. baby rocket leaves
- 30 gr. pumpkin seeds
- 1 very small onion (sliced)
- 200 gr. light feta cheese (diced)
- dressing:
- 3 tablespoons of olive oil
- juice of 1 lime
- 1/8 – ¼ teaspoon of chili powder
- salt, pepper
Instructions
Mix all ingredients for the salad in a large bowl.
Mix all ingredients for the dressing and pour into salad.
Mix and serve immediately.
