A refreshing and healthy snack for hot summer days. The frozen yogurt bars with strawberries and pistachios is a colorful snack with low calories. It only takes ten minutes of your time to have a snack ready to befool your desire for ice cream!
It is not necessary to use strawberries and pistachios, if you don’t like any of them. You can do your own mix-ins. These bars are equally delicious with fresh, dried, or frozen fruits, or, a combination of them. Also, you can use any nuts you like. To make it even more a desirable treat, add chocolate chips!
Yogurt Bars with Strawberries and Pistachios
These frozen yogurt bars with strawberries and pistachios are a refreshing and healthy snack for hot summer days. And low calorie, too!
- 2 cups Greek strained yogurt 2%
- 4 tbsp honey
- 1 cup pistachios, coarsely chopped
- 1 ¼ cup strawberries, coarsely chopped
Stir yogurt with honey very well. (I used the food processor)
Pour the yogurt-honey mixture into a square pan 24X24cm (9X9in) layered with parchment paper or plastic wrap, and spread it evenly.
Pour over pistachios and strawberries spreading them throughout the pan.
Cover the mixture with plastic wrap so that it rests on it and press slightly with your hand.
Put it in the freezer until frozen. (I left it overnight.)
Remove from freezer, leave to thaw for about 5-10 minutes and then cut into equal pieces.
Keep the pieces in a freezer in an airtight container, or in plastic food bags.
